Banana Bread

Like there aren't enough banana bread recipes in the world, right? This one uses extra banana in place of a lot of the fat, so you get a loaf that's still moist but not greasy or heavy. This isn't very sweet; you might like it with more sugar.

Preheat oven to 350 degrees.

Use a greased and floured loaf pan, or two mini-loaf pans. Or muffin tins. Fill whatever pans you use about half-full.

4 squishy bananas (110 calories each = 440)
2 tablespoons butter, softened (205 calories)
1/3 - 1/2 cup sugar (260 - 390 calories)
1 egg (80 calories)
1 1/2 cups flour (I used 1/2 cup whole-wheat and 1 cup all purpose = 690 calories)
1/2 teaspoon baking powder (5 calories)
1/2 teaspoon baking soda (0 calories)
1/2 teaspoon salt (0 calories)
big pinch of allspice
optional: 1/2 cup chopped pecans or walnuts (415 calories)

Mash bananas. Cream butter and sugar together. Add egg, flour, baking powder, soda, and salt, alternating with banana. Sprinkle nuts on top. Bake 45-50 minutes, or until golden brown.

Total calories per loaf: 1680-1810 (2010 - 2225 with nuts)
Calories per 1/10 loaf slice: 170 - 185 (205 - 230 with nuts)
